This morning, Perfect Fit was featured on the news providing a cooking demonstration to viewers of WLBT located in Jackson, MS.. Because February 6th is National Wear Red Day 2015, we chose to do a heart healthy recipe. National Wear Red Day is held the first Friday in February and is meant to raise awareness about heart disease, which is the number one killer of women. This spinach and apple salad is a favorite! Full of fiber and healthy fats, it is sure to help boost your heart health!

Spinach Apple Salad

Makes 4 servings

Ingredients:

Salad:

  • 7 cups spinach
  • 1/3 cup chopped walnuts
  • 1/4 cup dried cranberries, reduced sugar
  • 2 small apples, red and green
  • 1/2 small red onion

Dressing:

  • 2 Tbsp. olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp. honey
  • 1 tsp. Dijon mustard
  • pepper to taste

INstructions:

Heat a pan over medium-high heat. Once warm, pour walnuts in and cook until browned (approximately 3-5 minutes). Immediately remove walnuts to make sure they do not burn and allow to cool. Chop apples and red onion.  Combine all salad ingredients in a large bowl. Combine dressing ingredients and whisk in small bowl. Pour dressing over salad and toss.
